Events and all-day events are created via Siri and Calendars, and birthdays can either be set or created via Siri and Calendars, or set separately for contacts via Contacts, edit an existing person by selecting Add field, then Add “Birthday” and set the appropriate date.

Assuming you sync your calendar information with iCloud, the changes you make will match the alerts on other iOS and MacOS X hardware (but not the settings changes), helping to ensure you never forget an important event, birthday, or appointment again.
